Entering the kitchen this morning there was a slightly …. pungent smell! Red eyes and … pounds of onions to clean and prepare.
Not everyone loves it, to many ailments, someone tells us that he is allergic (although not an allergen) but a kitchen without onion, well it cannot be defined as such.
This year in our garden the red ones of Tropea have grown abundant and therefore in addition to using them in the normal preparation of our dishes we have caramelized them and preserved in sweet and sour, excellent to use in combination with cold cuts or with their color to decorate our dishes.
Do you like onions? White or red? Do you cry when you cut them too?
