Rice
Usually on Tuesdays in our menu rice appears in the form of risotto! It is a traditional Piedmontese dish given its proximity to the rice fields of Vercelli and recently also of Biella.
Rice is the most popular food in the world, especially it feeds many people on the Asian continent.
Its cultivation is particularly widespread in the Po Valley.

A Chinese legend tells that in a very distant time a severe famine struck the country and that the genius Good, seeing the sufferings of the peasants, sacrificed all his teeth, scattering them in a swamp. The water transformed the teeth into seeds from which thousands of rice plants sprouted. Since then, where there is rice there is abundance and its throwing on the spouses symbolizes love and fertility. Also in Italy, to wish the spouses fertility and prosperity, rice is thrown immediately after the ceremony. Probably this tradition derives from an old Greek rite according to which, in order to propitiate fertility, sweets of rice were rained on the couple. This custom is also widespread in Indonesia, where rice is thrown immediately after marriage with the intent, however, of retaining the soul of the groom who would otherwise run away. (Cit.)
